In Germany a rauchbier – which just means smoke beer – is generally an amber lager that uses smoked malt, and it is a specialty in Bamberg.  Schlenkerla, one of the most famous for this style, still smokes their own malt on site with beechwood as they have been since the 1400s.  This beer is an American twist on a German classic. Since we are in the United States, we used a combination of mesquite and cherry wood smoked malt in the recipe to put an American twist on it – hence Mount Rauchmore, named after the national monument.  You’ll find notes of chocolate, toffee, with a touch of honey and winter smoke.
